Ingredients
  1. 1 ½ c. nutritional yeast flakes
  2. ½ c. salt
  3. 1 ½ tsp. turmeric
  4. 1 Tbs. garlic pwd.
  5. 1½ tsp. marjoram, ground
  6. 1½ tsp. sage, dry rubbed
  7. 3 Tbs. parsley flakes
Instructions
  1. Place all ingredients in blender.
  2. Blend briefly to mix well.
  3. Allow powders to settle in blender a few minutes before opening.
  4. Store mixture in airtight jar.
Notes
  1. Yields 2 cups of seasoning

Ingredients
  1. 1 lb. firm water pack tofu, frozen at least 6 hrs, then thawed.
  2. 4 cups cooked, brown rice
  3. 3 Tbs. dry minced onions OR 1 medium onion, diced
  4. 6 Tbs. nutritional yeast flakes
  5. 1/2 tsp. celery salt
  6. 3 Tbs. Coconut Aminos or Bragg's Liquid Aminos
  7. 2 Tbs. Chicken-style seasoning
  8. 2 Tbs. lemon juice
  9. 1 1/2 tsp salt
  10. 2 Tbs. kelp powder, dulse flakes, or crumbled roasted nori (seaweed sheets)
  11. 1/2 tsp. dill weed, dry
  12. 1/2 cup. garbanzo OR vital wheat gluten flour
  13. 1/4 cup potato flour (not starch)
  14. 1 cup water
Instructions
  1. Squeeze the excess moisture out of the thawed tofu and crumble it into small pieces in a large bowl.
  2. Add all other ingredients
  3. Mix well.
  4. Shape into patties or sticks and either fry them in a sprayed non-stick frying pan till golden brown on both sides OR place them on a cookie sheet coated with cooking spray or coconut oil and bake at 375 degrees F. for 20-25 minutes.
  5. Turn and bake for another 15 mintues.
  6. Serve with Tartar Sauce or ketchup.
Notes
  1. Mixture also can be put in a loaf pan and baked at 375 degrees for about 45 minutes or till golden brown on top.

8 Keys to Optimal Health

NEWSTART-cropped-wmI have all kinds of keys – house keys, car keys, safe keys, and more. Their common characteristic is that they open things that cannot be accessed without them. So it is with these 8 keys to your best health. Each one provides opportunities for you to build habits of life that will serve you well, not just for today, but for the rest of your life. Best of all, they can be implemented by you, whether you are rich, or poor, or in-between. To help me remember these 8 keys to experience optimal health and wellnes, I use the acronym NEWSTART. Here is a brief description of each key followed by an ACTION STEP you can take to put yourself on the path to Your Best Health.

1 – Nutrition. Proper nutrition and habits related to eating have a huge impact on your health and your own choices hold the key to implementing and enjoying these benefits. Much research in recent decades has pointed to the fact that a mostly plant-based diet or total vegetarianism provides a strong foundation for the prevention and reversal of many diseases, including the one that kill most Americans and those that follow that general lifestyle around the world. Diabetes, Heart Disease, High blood pressure and Stress are all directly affected by our food choices. The Physicians’ Committee for Responsible Medicine just compiled a list of ways in which nutrition choices directly affect cancer risk. 2. Exercise. Everyone knows that exercise is essential to health, but what kind and how much? Our busy lives often provide big obstacles to actually implementing regular exercise. Intentionality has to be part of our toolkit to actually carry this out. Remember, if you don’t use it, you will lose it and muscle is a prime example. Muscle is much denser than fat, so the good news is that building muscle will help to move you toward your ideal weight (whether you are under or overweight) and will provide many trimming benefits if you are above your ideal weight. Studies show that exercise, even at home in an informal setting, significantly improved the quality of life for the elderly that suffered from osteoporosis. Better yet, if started early in life, the positive effects can continue well into the later years. And it’s never to late to start!

3. Water. This humble fluid has been greatly neglected in much of our society today. There is nothing so well-designed to meet the needs of the body for hydration, organ function, and optimal circulation as pure, soft water. No other beverage can take its place when you are on the path to best health. Its use externally is equally powerful. Bathing and a great variety of treatments utilizing the unique properties of water in its various forms (liquid, vapor, solid) can be literally lifesaving.

4. Sunshine. Much maligned due to fear of skin cancer, our society now finds itself in the position of more often suffering from a lack of sunshine than an overabundance. Sunshine is vitally important to the proper functioning of brain chemicals and a variety of hormones in the body. Its proper use can alleviate depression, improve mood, and even protect from various cancers.

5. Temperance/Self-Control. The ability to use those things which are health-producing (good food, etc.) in moderation and to completely abstain from those things which are harmful to the best health is the hallmark of true temperance and requires self-control. Thus this key to health relates to all others as well.

6. Air. Fresh air is a priceless gift. It truly is the stuff of life, as we would very quickly perish without it. But even when surrounded by large quantities of fresh air, our behaviors can take more or less advantage of it. For example, proper posture and breathing habits greatly improve our body’s internal oxygen levels, while failing to open the windows of our homes and provide adequate circulation of fresh air can keep us from enjoying the precious benefits of fresh air.

7. Rest. In our every increasing busy-ness, sleep often suffers. To really get the benefit of this key to health there are a number of simple activities that can greatly increase our benefit of the hours spent in rest. We will go into them in greater detail in a future post. Adequate rest has a direct impact on our moods, brain function, decision-making ability and memory. When we rest as well as how much we rest are both important factors in our health.

8. Trust in God/Stress Control. Our ability to respond in a healthy manner to the situations we face in our daily lives have an incredibly important impact on physical, emotional, and spiritual health. This key is essential to the implementing of each of the previous 7 keys. Without the support of an external higher power in our lives, we can never experience the depth of peace and joy that are foundational to truly productive and high-quality lives. There is such a powerful link between our mental state, our thought patterns and what we experience both physically and emotionally, that this key must be integrated into our daily life to truly experience Total Health and Wellness.

Adventures at 3ABN!

Today I’m blogging, on the road, from Thompsonville, Illinois, population 600 (at least according to the sign as you come into “town”). Believe it or not, this little town hosts an amazing Christian TV network that reaches every inhabited continent on this earth. Yes, 3 Angels Broadcasting Network (3ABN) is what I’m referring to and what brings me to this part of the midwest. I’ve been invited to present on the cooking show for their flagship program 3ABN Today and it’s been quite an adventure and learning experience being here for filming.2014-12-15 Cooking Lucia Tiffany (Latino too)_0131

My first invitation to participate with them involved filming several programs at the end of last year (more about them later) and now I’m back to do a few more! They film for the Spanish language network, 3ABN Latino, here as well and so I’ve found myself doing programs in both languages with the goal of encouraging healthy eating choices and showing how to prepare plant-based dishes that are simple but tasty.

Having never presented for TV before, it has certainly been both interesting and fun! Here are some of the things I have learned:

  • Three of the most important things to do are organize, organize, and organize some more! It’s a good thing I like to work off lists!
  • The quality of your helper(s) will make or break your ability to focus on the task of demonstrating the preparation of your food. I am so thankful for an excellent assistant in the kitchen and on the set that is able to keep things prepared ahead, keeps the dishes washed, the food organized, sets up trays for each dish, and has an eye for beauty.
  • Use a spreadsheet to organize your shopping list – it can get cumbersome to keep track of how many tomatoes or onions you need to buy for the 11 different recipes you plan to prepare when you need to make 2 or 3 batches of each recipe. It’s also very inconvenient to run out of things like salt or oil because you didn’t realize it would take more than a box of salt or medium bottle of oil to prepare all the food needed for a particular show.
  • Makeup artists are just that – Artists, with a capital A. Had my face airbrushed for the first time in my life today! My artist used an air powered liquid makeup nozzle that makes your face feel cool under the light breeze it creates and really does the job right. I must say that 3ABN has some real experts in this department and I so appreciate their skill.

Fruity Chews

I’d like to share with you one of the recipes that was a real hit with the crew (yes, they get to eat the goods when they finish filming the program – what a perk!) on my first visit here last December. It was a simple, healthy dessert called Fruity Chews.

  • 1 c. dried apricots
  • 1 c. dried pears
  • 1 c. dates, pitted
  • 1 c. raisins
  • ½ c. raw walnuts, almonds, or other nut
  • ¼ c. macaroon coconut
  • sprinkle of salt

Grind the dried fruits and nuts together through a food processor or meat grinder. Mix in the salt by hand. Shape into cherry-sized balls or little logs and roll in the coconut. Store in a covered container in the refrigerator until served.

Note: any combination of dried fruits may be used.
